Easy raw vegan chia cups

In November last year, I did a month of eating raw (vegan) and became a little obsessed with chia pudding cups. I thought I’d share with you how easy they are:

2 tbl chia seeds
2/3 cup coconut milk (or almond, or coconut milk & water)
1/2 chopped fruit of your choice (berries, mango, banana, peach…)
2 tbl coconut yogurt
2 tbl crunchy toppings (raw granola, nuts, seeds, coconut flakes, cacao nibs…)


Soak the chia seeds in the mylk overnight (you can add frozen berries at this stage too if you don’t have any fresh ones).
In the morning, layer the chia pudding with fruit, coconut yogurt & crunchy toppings in a glass or jar.
Admire your handiwork, and then gobble it up (or take the jar to work for a delicious mid-morning treat).
